Potato Toast / Potato Sandwich

Potato is one vegetable which my family loves.  As brinjal , potato is also loved by most of them around the world. I also heard that potato  skins along with honey is used as remedy for burns in India. Burn centers in India  have experimented with  the use of the thin outer skin layer to protect burns while healing.
Potatoes are prepared in many ways with or without skin. Steamed or fried or baked. There are N number of recipes with potatoes. For today, end day , week 2 of BM 38, am here with potato toast / potato sandwich. Simple and delicious  snack for mid day, after school or for breakfast. Here goes the recipe....


We need:

Red Potatoes 4 small
Bread slices 8
Grated carrot 1/4 cup
Chopped cilantro 3 spoons
Chaat masala 1/2 spoon
Salt to taste
Green chili 1 ( optional) 
Chili powder 1/2 spoon
Lime juice 1 1/2 spoon
Oil  or butter


Method:


Boil red  potatoes and mash them.
You can use any kind of potatoes here. 
Add chopped cilantro, grated carrot  chaat masala, garam masala, green chili, lime juice and 
salt to taste.

Mix well. Make each bread slice into 2 triangles.                                        
Apply ketchup  or green chutney on each slice. 
Now Spread the potato mixture on top of it  and keep aside.


Heat skillet and add little oil or butter.
Place each bread slice facing masala part on top.
Cook on low flame for 3 to 4 minutes and flip over.


Cook for another 2 to 3 minutes and transfer to serving place.
Serve hot with ketchup or green chutney.
