Broccoli & Potato Paratha

Broccoli is an excellent source of  Vitamin K , C, E and B 6. It is a very good source of dietary fiber, magnesium, protein, calcium, omega 3 fatty acids and iron. On the other hand Potato is also rich in Vitamin B 6 and C.

I have prepared Broccoli and Carrot paratha earlier, this time i have paired it with potato.  Mashed Potato gives nice binding and taste to the dish. This recipe goes to week 2, day 2 of Blogging Marathon 103 under the theme " Bread of similar type".




Ingredients for stuffing:


Broccoli florets 1 cup
Large potato 1
Cumin seeds crushed 1/2 spoon
Green chili chopped 1/2 spoon
Chopped cilantro 1 tbsp
Salt to taste
Turmeric powder 1/4 spoon
Chili powder 1/4 spoon
Oil 


Ingredients for Paratha:



Whole wheat flour 2 cups
Salt to taste
Oil / ghee





Preparation:


In a mixing bowl add wheat flour , salt and 1 spoon oil.
Mix everything well, add water to make it a semi soft dough.
Cover and set aside to prepare filling.
Boil potato in presser cooker for 2 whistles.
Add broccoli florets in boiling water and cook for 3-4 minutes, drain and set aside to cool completely.
In a bowl add mashed potato and  chopped or minced cooked broccoli.
Also add salt, chili powder, turmeric, chopped cilantro and  crushed cumin.
Mix everything well.
Now make 4 to 6 equal portions of dough and the filling.
Roll out one portion of dough little bit and place one portion of filling in center and seal from all the sides as shown in the picture. 
Use dry flour for dusting, now roll out slowly to make a 5-6 inch diameter paratha.
Heat tawa and place the rolled out paratha on it.
Cook on both sides till nicely done.
Add ghee / butter / oil on both the sides while cooking.
Repeat the same process with rest of the dough and filling.
Serve hot with yogurt or pickle.
