Drumstick Leaves Kottu

Drumstick leaves are rich in iron and protein, adding lentils to this leafy vegetable makes the dish

 even more healthy. These leaves are also rich in Vitamin A and C.  One of my friend from Chennai

 sometime said Drumstick leaves kottu or kuzhambu is one of the traditional dishes in Tamil Nadu.

 My mom used to say consuming drumstick leaves during pregnancy is very good. This recipe goes to

 week 4 day 2 of Blogging Marathon 123 under the theme " Protein  rich food ".



Ingredients:


Drumstick leaves 2 cups

Toor Dal 1 cup

Turmeric powder 1/2 tsp

Salt to taste

Udad dal 1 tsp

Mustards seeds 1/4 tsp

Cumin seeds 1/2 tsp

Red chili 1

Curry leaves 4


For Grinding:


Grated fresh or dry coconut 1/4 cup

Red chili 3

Cumin seeds 1 tsp

Raw rice 1 tsp


Preparation:


Wash and soak rice for 10-15 minutes.

Presser cook toor dal for 3 whistles.

Remove drumstick leaves from the twigs and wash couple of times.

Chop the leaves, and add them to sauce pan along with turmeric powder and 3/4 cup of water.

In a mixer grinder add cumin seeds, red chili, soaked rice, coconut and grind it to smooth paste.

Once the dal is cooked add it to the cooked drumstick leaves along with the ground masala paste.

Add salt to taste and some water if you think the kottu is too thick.

Lets prepare tempering by heating oil in a small pan, add mustard seeds, cumin seeds, red chili, udad

 dal and curry leaves.

Saute for a few seconds and all it to the cooked kotti.

Serve hot with rice or roti.

I haven't made kootu with drumstick leaves but your version sounds yummy. The nutritious dal sounds delicious with rice, drizzled over with some ghee.

This is a nutritious kootu! Makes a comforting meal with rice or roti. I love it with rice and a dollop of ghee. Excellent recipe.

Drumstick leaves kootu are so healthy and delicious. I make it almost similar way regularly in the home.
