Banana Walnut and Dates Bread

Banana is one of my favorite fruit.  This is one of the recipe which  I  wanted to make but was keep postponing since very long time. I like the Banana Walnut bread which we get in Starbucks. Its been a while I had it. Thought why not make it at home and enjoy it with a cup of coffee. It make this bread more tasty I have added chopped dates also along with chopped walnuts.  Very simple to prepare yet healthy. This recipes goes to the 2nd day of BM 59 under the theme "Holiday Bakes" As kids wake up late during holidays and love to have their favorite food  apart from the regular rice, roti etc...I made this delicious and healthy banana  bread which they have it at any time of the day.  Here goes the recipe........... 


Ingredients:

Ripe banana 1
Walnuts 1/4 cup chopped
Dates 1/4 chopped
Melted butter 1/2 cup
All purpose flour / Maida 1 cup
Sugar 3/4 cup
Eggs 2
Vanilla extract 1/2 spoon
Pinch of salt (optional)


Preparation:


Mash banana in a bowl and keep aside.
Melt butter, add sugar and blend it together, now add eggs and mix  all the three ingredients  till they combine well.
Now add mashed banana, salt  and  vanilla extract and mix it well.
Now add flour little at a time and make a soft dough.
Now add chopped walnuts and dates in a separate  bowl and add 1 spoon dry flour to it.
Mix well and add it tot he dough.
Make sure no lumps are formed.
Transfer the dough to greased bread loaf pan and bake in pre-heated  oven at 350 F for 45 minutes.
Insert  a toothpick or knife in the bread and check if it comes out clean. 
If dough sticks to the knife it means you need to bake for another 5 to 10 minutes or until knife  inserted in bread comes out clean.
Remove and let it cool down completely to cut and serve.
