Vegetable Roll Ups

Vegetable Roll Ups with colorful veggies and cream cheese Rolls are great for lunch box or as a evening snack. Can be served as a light meal too. Its up to you which veggies you want to add, I have added sweet corn, broccoli and carrots along with lots of shredded cheese. Unlike other Wraps or rolls these roll ups are served cold. 

This recipes goes to week 4, day 3 of Blogging Marathon 112 under the theme " Wraps and Rolls".




Ingredients:


Tortilla 3
Sweet corn 1/4 cup
Broccoli florets 1/2 cup
Carrot 1 medium size
Shredded Cheese 1 cup
Mayonnaise 3/4 cup
Cream cheese 1 cup


Preparation:


If using frozen corn, thaw them before using.
Boil 2 cups water and add broccoli, let rest for 2 mints and drain water.
Chop or grate florets.
Grate carrot and set aside.
In a bowl mix cream cheese and mayo, set aside
Take a tortilla spread cheese and mayo mix, add grated carrots, grated broccoli and corn.
Sprinkle some grated cheese evenly all over.




Starting from one end, roll the tortilla tightly and wrap them individually in plastic wrap.
Refrigerate for at least 2-3 hours.
Remove and slice them to 6-8 equal pieces.
Serve.
