Butterscotch Ice cream

Butterscotch Ice cream is a very popular Ice cream flavor in India. This is a rich, creamy and

 no churn  Ice cream that  is easy to make with just few ingredients. You don't even need any  Ice

 cream machine / maker. Flavors of butterscotch essence and crumbled / crushed praline gives this

 ice cream an awesome flavor with a  nutty texture. You might ask me why I am posting Ice cream

 recipe in Winter. Do we really  need any specific season to enjoy our favorite Ice cream?  😉 No

 right .....But anyways I made  this Ice cream last summer during Pandemic when we were barely

 going out for groceries and family was craving for some Ice cream. 


This recipe goes to Week 3 Day 1 of Blogging Marathon 129 under the theme " Make it sweet".







Ingredients:



Heavy cream 2 1/2 cups

Condensed Milk 1 can ( 14 oz )

Milk powder 3 tbsp

Sugar 1/2 cup

Cashew nuts 10

Almonds 10

Yellow food color 2 drops

Butterscotch essence 1 tsp


Preparation:



Lets begin the process by making praline.

Chop cashew nuts and almonds, set aside.

Heat a wide pan, add sugar and do not stir it.

On medium to low heat let the sugar melt.

As soo  as the sugar melts and caramelized add chopped nut, combine well and remove from heat.

Transfer the mixture onto butter paper, spread it and let it cool down completely.

Once the nut mixture solidifies break it to pieces and crush it with a rolling pin or use a food

 processer to make it course powder.





Procedure to make Ice cream:



Take a pan or vessel where you would like to make the mixture for ice cream.

Freeze this vessel in freezer for about 30 minutes.

Remove the vessel from freezer and  add heavy cream in it.

Using hand blender or a whisk beat the cream until it forms soft peaks.

In another bowl add condensed milk, milk powder, butterscotch essence, food color and mix well.

Now add some of the whipped cream into this and fold it slowly with the spatula.

Slowly add all of the cream to condensed milk mixture and combine well.

Now add the crushed praline and mix.

Transfer this mixture to a ice cream bowl or container you want to freeze.

Freeze over night or for 8 hours.

Serve and enjoy.

It's been ages since I had ice cream. This butterscotch ice cream looks so creamy and tempting. I could finish that bowl in a minute.

This exactly reminds the butterscotch icecream I had in India from childhood. I don't think I will again now that I have your recipe! Thanks for sharing.

It was my childhood fav. Now I don't remember the flavor at all :( Looks like something I would love for sure.
