Kodi Vepudu ~~ Andhra Chicken Fry ( Restaurant style )

Kodi vepudu is a spicy chicken fry made with lots of masalas, yogurt, chilies and curry leaves. Serve

 it hot steamed rice. I love to have it with hot and spicy  Rasam rice. Can be served as an appetizer or

 as a side dish for roti, chapati and rice. 

This recipe goes to week 3 day 2 of Blogging Marathon 128 under the theme " Restaurant Style

 Dishes ".


 Ingredients:


Chicken 1 lb

Onion 1 large

Green chili 4

Curry leaves 10

Cashew nuts 10

Black pepper corn 1 tsp

Cinnamon stick 1 inch

Cardamom 2

Cloves 5

Bay leaf 1

Coriander powder 1 tbsp

Cumin powder 1/2 tbsp

Garam masala 1 tsp

Salt to taste

Coriander leaves 1/4 cup


For Marination:


Ginger garlic paste 1 tbsp

Turmeric powder 1 tsp

Chili powder 1 tbsp

Yogurt 1 cup

Salt to taste





Preparation:


Wash chicken pieces thoroughly and marinate it with ginger garlic paste, chili powder, turmeric

 powder, salt and yogurt.

Mix well and set aside for 30 minutes.

In a wok or deep pan heat oil and add all the whole garam masalas, saute for a minute.

Add  sliced onion, slit green chili and curry leaves.

Saute for 1-2 minutes and add cashew nuts.

Cook for another minute and add marinated chicken.

Mix it well and let cook for 5-7 minutes.

Now add all the dry masalas and mix.

Adjust salt at this point of time and cook further until the gravy is dry and well coated with chicken. 

Garnish with chopped cilantro and serve hot.
