Mango Kesari

Mango kesari / Mango sheera / Mango halwa is a dessert made with Semolina, sugar, mango and

 nuts. This is a simple yet delicious sweet made in just few minutes. I have used store bought mango

 pulp in the recipe, if you find fresh ripe mangoes go ahead and use them too. Sugar and mango  can

 be adjusted as per your taste and preferences. 

This recipe goes to week 3 dat 1 of Blogging Marathon 129 under the theme " Make it Sweet".





Ingredients:



Sooji / Semolina 1 1/2  cup

Mango pulp 1 cup

Ghee / Butter 1/4 cup

Sugar 1/4  - 1/2  cup

Cardamom powder 1/2 tsp

Cashew nuts 10

Raisins 10

Saffron pinch

Water 2 cups



Preparation:




Heat ghee / butter in a pan, add cashew nuts and raisins.

Saute till cashews turn light brown and raisins puff up.

Remove them to a bowl and set aside.

Add sooji and saute till rava turns golden brown.

Add  2 cups water and mix, cover and cook on low to medium flame until the rava  absorbs the water

 completely.

Now add mango pulp and sugar, mix well and cover to cook further for 5 minutes.

Add cardamom powder saffron strands, cashew nuts, raisins  and adjust sugar at the point of time.

If you like add a spoon full of extra ghee / butter,  mix and remove from heat.

Serve hot.

Wow! Mango Kesari looks beautifully made. Love that sheen of ghee on top. The texture is amazing and I bet it's so soft that even a toothless person can eat it.lol
