Sweet Boondhi

Boondhi are pearl size small balls made of besan or chickpea flour. It can be savory boondhi or

 sweet boondhi. Savory boondhi are  fried besan pearls mixed with some spices and curry leaves.

 Sweet boondhi are fried  beasn pearls added to sugar syrup, which are soft and juicy.

Today I am posting about sweet boondhi which is so simple to make with just few ingredients. A very

 simple sweet that can be done in just 30 minutes.


This recipe goes to week 3 day 3 of Blogging Marathon1 29 under the theme " Make it Sweet".





 Ingredients:


Besan 1 cup

Baking soda 1 pinch

Water 1/2 cup or may be little more

Oil for deep frying

Boondhi Ladle

Cashew nuts 10

Raisins 10

Pistachio 5


For Sugar Syrup:


Sugar 1 cup

Water 1/2 cup

Cardamom powder 1/2 tsp

Saffron color 1 pinch




Preparation:


Sieve besan / gram flour in a mixing bowl, add baking soda and mix.

Add water little at a time to make it a free flowing batter.

Heat oil in deep frying pan.

Hold ladle 4-5 inches above the oil, pour batter in ladle, tap the ladle so that boondi falls evenly.

Fry for about 45-55 seconds and remove.

Repeat the process with rest of the batter.

At the end fry cashew nuts and raisins too.


Making syrup:


Add water, cardamom powder and saffron color to sugar and bring it to boil.

You need to get one string consistency. 

Switch off flame, add the fried boondhi, raisins and cashew nuts.

Mix well and cook on low to medium flame until the syrup is completely soaked by boondhi.

Let it sit for 5-6 hours to serve.
