Thai Fried Rice ~ Chicken and Vegetables

Apart from Indian food, me and hubby dear love to eat from other cuisines, specially on weekends. We prefer  Chinese, Mexican and specially Thai. These Cuisines are not only tasty but also very simple to cook. One such dish which is very simple to prepare is Thai Chicken Fried Rice.
Simple ingredients, simple preparation and awesome taste.

This  is one of my favorite dish which is  made in the weekends, specially on the days where we go outing come home tired and not willing to cook any dish which has lengthy process. This is for those lazy weekends and for those who want to make some thing different from the regular menu.

This will be my 3rd post for BM 52, week 1  under the theme " Weekend Dinner Menu". This dish can be made with only chicken or only veggies but we prefer both, so here goes the ingredients and preparation....

                                         



We need:

Cooked rice ( basmati / jasmine / brown / sona masoori )  2 cups
Chicken 1/2 pound
Eggs 3
Onion sliced 1/4 cup
Carrots grated 1/2 cup
Broccoli 1 cup
Sprouts 1 cup
Chopped mint leaves 1/2 cup
Chopped cilantro 1/4 cup
Soy sauce 1 1/2 spoon
Salt to taste
 Red chili paste 1 1/2 spoon
Basil leaves 1/4 cup
Chopped ginger and Garlic 1/2 spoon
Oil 4 spoons


Method:


Rice should be cooked a day before or cook the rice cool it down to room temperature  and leave it in Refrigerator for 2 hours.
Best if you have any left over rice from he previous day.
Chop chicken to small pieces and wash through.
                                     
Heat small pan and add 1 spoon oil.
Now fry the chicken with pinch of turmeric and little salt.
Remove and keep aside.
In a large wok, heat 1 more spoon of oil and add beaten eggs.
Scramble the eggs and keep aside.
In the same wok add rest of the oil and add chopped ginger and garlic.
Saute for a minute and add sliced onions, grated carrots, broccoli.
Mix and cook for a minute or two.
Now add soy sauce, chili paste and salt to taste.
Make sure you do not add too much salt because soy sauce contains some salt in it.
Mix well and add chicken and egg which we cooked  and kept aside.
Now add cooked rice and mix well.
Finally add sprouts, mint , cilantro and basil leaves and give it a stir.
Serve hot with chili sauce or  Vinegar.

Yumm, I always have Thai red curry paste in the fridge and this is a quick meal to make and it is filling and delicious.
