Strawberry and Chocolate chip Cupcakes

A cupcake is a small cake designed to serve one person, which may be baked in small thin paper or aluminium cup. As in large cakes icing and other decoration may be applied. The standard cupcakes uses the basic ingredients such as butter, sugar, eggs and flour. The cake batter may be flavored with raisins, nuts, berries or chocolate chips or coco powder.

These days we can find number of flavors and varieties of cupcakes. Kids love cupcakes, whether it is a birthday party or wedding or any other gathering. My kids love cakes and pastries. The cupcakes which I made today are made my my kids and myself. They helped me in beating eggs, mixing the fruit flavor, flour and the biggest thing was waiting for the cupcakes to cool down, hahahaha...

Today we are starting with 4th and final week of BM 53. My theme for this week is" Kids Delight - Fruits in any form". Fruits are always good to eat as they are but some people do not like to eat  some  fruits as they are. One such person is my son, he refuses to eat mangoes, strawberry and some other fruits. But he loves mango juice, strawberry ice cream etc... So for today I have used Strawberry puree to flavor the cake flour. It not it gives strawberry taste to the cupcakes but also gives vibrant and rich red color to the cake. Here goes the recipe.....




Ingredients:


Cake flour  / All purpose flour / Maida 1 1/4 cup

Baking powder 1 1/4 spoon
Baking soda 1/2 spoon
Eggs 2
Sugar 3/4 cup
Oil 1/2 cup
Fresh strawberry puree 1/2 to 3/4 cup
Pinch of salt
White chocolate chips 1/2 cup
Red food color ( optional)
Cool whip 1 cup


Preparation:



In a mixing bowl add cake flour, baking powder, baking soda, sugar  and salt.

In a separate bowl beat eggs well and add oil, mix well.
Now add the egg mixture to the dry ingredients and mix it well so that no lumps are formed.
Now add strawberry puree and mix it well.
I haven't used any food color here, if you think the batter is  not giving the bright red  color you can just add a drop of red color o it and mix. 
Once the mixture is smooth with out any lumps add chocolate chips and give it a stir.
Preheat oven on 350 Degrees F.

Place the cupcake, cups in muffin / cupcake pan and fill about 1/2 full.
Now bake these cupcakes for about 12 to 14 minutes.
Remove and let them cool down completely.
Once the cupcakes are cooled down pipe on the cool whip / frosting.
I just used a fork to frost the cupcakes with cool whip.
Garnish with strawberry slices and serve.


Note:

Do not add water or milk while you make strawberry puree to retain bright red color.
The strawberries I have used were little ripe and dark red in color.
Of course the cupcakes depend on the strawberry which you are using, so don not worry if the cupcakes are not bright red in color.
