Pistachio Flavored Butter Cookies


 As the Christmas holidays are approaching kids are making their plans for their play dates and sleep overs.  Kids love to have cookies, chips  and chocolates and what not. Being a stay home mom, I always love to cook something exciting and new for my kids. Not only me but I guess most of the mom's  feel very happy when your kids and family  love and appreciate your food.

Saw this easy and delicious butter cookies recipe in one of my friends place and wanted to give it a try. With few modifications made these Butter cookies with a touch of pistachio flavor. My kids are picky eaters and not  a big fan of eat nuts in their daily diet. So I have added some pistachio powder to the cookie mixture, believe me or not kid's didn't even know that I have added some nuts to the cookies. Now these are a big hit in my house.

Today we are starting with BM 59, last marathon  for the year 2015. Starting this months Marathon with a special theme called "Holiday Bakes". As  holidays are around the corner, and kids are having parties and Christmas celebrations in school, made these melt in mouth Butter Cookies for my kids and their friends.  Here goes the recipe.......





Ingredients:


All purpose flour 1/2 cup
Corn starch / Corn flour 1 cup
Butter 1 stick
Sugar powder 1/4
Powdered  / crushed Pistachio  1/4 cup
Food color of your choice

Preparation:

Butter has to be at room temperature.
In  a bowl mix butter and sugar powder to become a soft mixture.
In a separate bowl  mix together flour, corn starch and pistachio powder.
Now add little flour mixture at a time into butter mixture and mix well to become a soft dough.
Now divide the dough to 2 portions.

Add few drops of food color of your choice  and mix it well again.
Refrigerate  the dough for about 15 to 20 minutes.
Remove and make small balls with each colored dough and press a little with your fingers to flatten the dough.
Place each cookie on a greased baking tray.
Bake on 325 Degree Pre-heated oven  for 12 to 13 minutes.
Remove and let them rest for 15 minutes.
Remove and serve or store in air tight container.
