Brown Rice- Veg Pulao

Brown rice is whole grain rice with the inedible outer hull removed, white rice is the same grain with the hull. Brown rice is a good source of magnesium, vitamin B6 and high in fiber. Brown rice generally needs longer cooking times than white rice. Today's recipe is Rice dish -Pulao, with Brown rice and lots of veggies.

Pulao or pilaf or pilau is a one pot rice dish. Rice being the main ingredient, others could be mixed veggies or meat along with some spices. Unlike Biryani which need lots of spices, Pulao is a milder version of rice dish. One pot meals are always super easy to prepare. 

Today we are starting with 99th Edition of Blogging Marathon. It is April and its the month of Mega Marathon. Unlike other months Mega Marathon has only one theme, for this month it is Biryani / Pulao / Khicid  with grains. This theme was announced couple of months ago, but I was hesitating to take up this theme as  I was worried " will I be able to cook and post everyday". When my fellow bloggers were discussing about this tempting theme, I couldn't stop myself to take up the theme and start cooking. It was not that difficult as I thought. So for Day 1, am here with a super delicious Pulao with brown rice and veggies. Here goes the recipe.....




Ingredients:


Brown Rice 1 1/2 cup
Sliced Onion 1/2 cup
Ginger Garlic paste 1/2 spoon
Mixed Vegetables 3/4 cup ( Potato, carrot, green peas, beans )
Chopped mint leaves 1/4 cup
Chopped cilantro 1/4 cup
Turmeric powder 1/4 spoon
Chili powder 1/4 spoon
Garam Masala 1/4 spoon
Salt to taste
Oil 2 tbsp


Ingredients for Cucumber Raita:


Cucumber chopped very small 1/4 cup
Salt to taste
Yogurt 1 cup
Chaat Masala 1/4 spoon




Preparation for Pulao:


Wash  and soak brown rice in water for 30 minutes.
Heat oil in a pan and add sliced onions and cook till they turn light pink color.
Now add ginger garlic paste and cut vegetables.
Add turmeric powder and salt.
Mix well and saute for few seconds.
Now add the soaked brown rice ( without water ) and mix well. 
Add chili powder and garam masala powder and mix.
Saute for a minute and add 3 1/2 cups of water.
Also add chopped mint and cilantro.
Bring the water to boil on high flame.
Now simmer the flame and cook till rice is completely cooked.
Serve hot  with cucumber raita or any gravy curry.





Preparation for Raita:



Peel the skin of cucumber and chop very fine.
Add it to yogurt along with salt and chaat masala.
Mix well and serve with rice.

Wow! Pulao with brown rice! Superb start. It has been a while since I have cooked brown rice at home. This one sounds like a good one to restart brown rice at home.
