Dum Aloo or Aloo Dum is a potato based traditional dish from Kashmiri Pandit Cuisine. It is a easy, delicious and flavorful curry usually made with baby potatoes, mild spices, cashews and yogurt. The potatoes are deep fried and cooked in a gravy on low flame. This creamy and yummy curry goes well with any pulao, biryani or any Indian Bread. Now, how about making biryani with this delicious curry. Just soak some rice for a while and cook with very little spices as we already added some spices to the gravy. Layer it and cook on dum style. That’s it enjoy with your favorite raita.

Ingredients:
Basmati Rice 2 cups
Prepared Dum Aloo curry 2 cups
Onion 1 small sliced
Bay leaf 1
Cinnamon 1 inch stick
Cardamom 2
Cloves 3
Biryani masala 1 spoon
Salt to taste
Butter / ghee 2 tbsp
Oil 1 spoon
Chopped cilantro 1/2 cup
Preparation:
Wash and soak rice for 30-40 minutes.
Add 6 cups water to rice along with 1 spoon oil.
Also add all the whole spices and 1/2 spoon of biryani masala.
Add salt to taste.
Cook rice till its 80 percent done.
Drain the water and set aside.
In a wide deep pan add 1/2 of the dum aloo curry.
Layer it with 1/2 of the rice and add some chopped cilantro on top.
Now add rest of the curry and top it with rest of the rice.
Add cilantro and butter / ghee on top.
Cover and seal the pan with chapati dough or aluminum foil.
We will be cooking this biryani in a dum style.
So switch on the stove and place thick flat pan / skillet.
Place the biryani vessel on top and cook on high for 10 minutes.
Now turn the flame to low and cook for another 15 minutes.
Switch off flame and leave aside for 10 minutes.
Remove and serve hot with raita or any gravy curry.

Now this Biryani is a complete killer ! Seriously who doesn’t like potatoes ? They’re an all time favourite with most , and I am sure this Biryani will be a total hit ! Loved it to the core !
This one is new to me. Aloo dum is like Kasmiri's signature dish and I am sure the flavors are elevated in this,interesting version of biryani.
