Jodhpuri Pyaz Ki Kachori ~~Onion Kachori

Onion Kachori or popularly known as Pyaz ki kachori is a delicious, crispy and spicy snack. Originating from Jodhpur, Rajasthan onion kachori's are also served for breakfast along with Jalebi and a cup of hot tea. Deep fried flaky onion Kachori is an amazing snack to relish specially on rainy days. These steaming hot pyaar ki kachoris or aloo pyaz ki kachoris are sold at almost all sweet-snack shops in Rajasthan. You can prepare these kachoris ahead of time and re-heat them in an oven just before serving. 

This recipe goes to day 11 of Mega Marathon theme " Sweets and Snacks".

Ingredients for filling:

Onions  3 medium chopped 
Potato 2  small boiled 
Cumin seeds 1/2 tsp
Coriander seeds 1/2 tsp
Fennel seeds 1/2 tsp
Asafoetida 1/4 tsp
Green chili chopped 1 tsp
Grated ginger 1 tsp
Red chili powder 1 1/2 tsp
Turmeric powder 1/4 tsp
Gram flour 2 tbsp
Lime juice 1 tbsp
Chopped cilantro 1/2 cup
Sugar 1 tsp
Garam masala 1/2 tsp

Ingredients for crust:

Maida  1 1/2 cup
Ajwain / Carom seeds 1/2 tsp
Salt to taste
Oil 1/4 cup

Preparing Dough:

Add salt, oil and carom seeds to flour and mix well.
Now add water to make a semi stiff dough.
Cover and set aside for 15 minutes.

Preparing Masala / Stuffing:

Heat pan and dry roast fennel seeds, cumin and coriander seeds.
Cool and blend it to make  powder out of it.
Peel the skin of boiled potatoes and mash it.
Heat oil in pan and add dry masala powder.
Saute for a minute and add chopped green chili, chopped ginger.
Now add chopped onions and mix well.
Cook for 5 minutes , now add salt to taste.
Also add red chili powder, turmeric powder and gram flour, mix everything well.
Now add mashed potatoes and mix thoroughly.
Now add garam masala, sugar, chopped cilantro and lime juice.
Mix and switch off flame. 
Let the mixture cool down completely to make lemon size balls.

Preparing Kachori:

Divide the dough to the lemon size balls, same as the stuffing.
Now using your hands flatten the dough ball, place the stuffing ball in center and seal the filling with dough from all the sides to make a stuffed ball.
Using your hands flatten the stuffed ball a little as shown in the picture.
Heat oil in deep frying pan.
Add few kachories at a time to nice and crisp or until they turn golden brown.
Remove and place them on paper towel to remove excess oil.
Serve hot or at room temperature with some sweet or green chutney.

hahah ..I have onion kachori too and I made them as mini ones..completely forgot that it has to be flatter and not balls...your version has turned out super sinful Sushma.

Awesome ,we love these Pyaz ki Kachoris . They are a must on all our Rajasthan trips .
