Rajasthan - Kalmi Vada

Kalmi Vada is a delicious snack originating from Rajasthan. This snack has a crispy texture because of the coarsely ground chana dal. These vadas are crispy outside and soft inside. Kalmi  vadas are similar to  South Indian snack masala vada. These vadas can be made  ahead of time and re fried when you are ready to serve. This Rajasthani delicacy is a perfect accomplishment for tea or coffee on a rainy day or cold winters. Simple yet delicious vadas. Jodhpuri Mirchi Vada

This recipe goes to day 23 of Mega Marathon 104 under the theme " Sweets and Snacks".


Chana dal / Bengal Gram 1 /2 cup
Moong dal 1/4 cup
Boiled and mashed potato 1 medium size
Crushed black pepper 1/2 tsp
Crushed coriander seeds 1/2 tsp
Chopped cilantro 1/4 up
Green chili 3
Ginger 1 inch root
Salt to taste
Oil for deep frying


Wash and soak chana dal and moong dal for 3-4 hours.
Blend coarsely along with ginger and green chili.
Transfer the mixture to mixing bowl.
Add crushed black pepper, coriander seeds, salt, mashed potato and chopped cilantro.
Mix everything well and divide the dough to 8-10 equal portions to make patties.
Heat oil for deep frying.
Drop few patties at a time in hot oil, fry until they turn light golden brown.
Remove and set them aside.
Continue frying the rest of the patties.
Turn the flame to low, cut the fried patties / vadas to half.
Fry the cut vadas again in oil till nice and crisp.
Serve hot with green chutney.

Awesome , so nice and crisp ! And beautifully fried too to a perfect golden . Adding potato is new to me , never done that !
