Beetroot Raita

Beetroot raita is a great accomplishment to any spicy flavored rice or biryani. It goes very will with stiffed parathas too. The vibrant color not only attracts people but also tastes amazing. This simple raita goes to week 2 day 3 of Blogging Marathon 112 under the theme " Lets make some Raitas".






Ingredients:


Grated beetroot 1 cup
Curd / Yogurt 2 cups
Salt to taste
Mint leaves for garnish


Preparation:


In a small pan add 1/4 tsp oil and add grated beetroot.
Cook on low flame for 10 minutes or till beetroot is cooked 80%
Let the mixture cool completely.
Meanwhile beat the curd smoothly.
Add salt and cooked beetroot.
Mix well and garnish with chopped mint.
Refrigerate for 15 minutes or until ready to serve.

Beetroot gives a pale pink beautiful color to the dishes you prepare. It looks very yummy. Perfect dish once summer weather sets in.
